Pasta Frittata
Leftover pasta cooked in beaten eggs in a pan until set and crispy. Italian comfort food from nothing.
Easy · 20 minutes
Ingredients
- 2 cups leftover cooked pasta
- 4 eggs
- 50g parmesan
- Salt and pepper
- 2 tbsp olive oil
Steps
- Preheat oven to 200°C/400°F.
- Beat eggs with parmesan, salt, and pepper.
- Mix pasta into eggs. Let soak 2 minutes.
- Heat oil in ovenproof pan. Add pasta mixture. Press down flat.
- Cook 3 minutes until bottom sets.
- Transfer to oven. Bake 10 minutes until set.
Why this works
Eggs bind leftover pasta into a cohesive cake. The bottom crisps in the pan and the top sets in the oven.
