Shakshuka
Eggs poached directly in a spiced tomato sauce. One pan, big flavor, naturally vegetarian.
Easy · 25 minutes
Ingredients
- 4 eggs
- 1 can crushed tomatoes
- 1 onion, diced
- 3 cloves garlic
- 1 red pepper, diced
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp chili flakes
- 2 tbsp olive oil
- Salt
- Fresh herbs to serve
Steps
- Heat olive oil. Cook onion and pepper 5 minutes.
- Add garlic, cumin, paprika, chili. Cook 1 minute.
- Add canned tomatoes. Season. Simmer 8 minutes.
- Make small wells in the sauce. Crack eggs into each well.
- Cover and cook 6–8 minutes until whites are set.
- Serve from pan with bread.
Why this works
The tomato sauce creates a flavorful steam pocket for the eggs. The yolks stay slightly runny while the whites set.
